Fettuccine Alfredo Recipe



Hi everyone. How was your Christmas? Mine was good. Here’s to a happy and prosperous new year. Cheers!

To bring in the new year well, one must eat well on the first day of the year. There are many traditions. Some believe eating black-eyed peas will set you up for a good year.

That’s cool. Whatever floats your boat. To plan for the same thing year after year has never been my style. I’m not big on traditions. They’re like stagnant water. I do love me some black-eyed peas, though.

Personally, I believe it’s just a matter of preparing a meal for yourself and those you care about. The food is the thing on January first. Feed yourself well. Also, January first is really the only day during the holiday season that I can throw down in my kitchen.

What I mean by “throw down” is that I can cook whatever I want. On Thanksgiving, Christmas Eve, and Christmas Day, if I’m cooking, it’s to fulfill a request.

On those days, we sit down to the same food every year so I’m not about to make the same dish every new year’s day. I look forward to cooking up something new each year.

This year, Santa left a box of blackened shrimp from World Port in the freezer for me, (he loves my cookies) and I knew right away what I would be making.

They were simple to prepare. Just two minutes per side in a hot skillet, and they’re done. Ready for use any way you’d like.

Blackened Shrimp Fettuccine Alfredo Recipe


If you have a blackening seasoning you love, and are perfectly capable of making blackened shrimp, I applaud you and urge you to do so. If you don’t want to hassle with putting together a blackening blend and cleaning a whole pound of shrimp, believe me, these blackened shrimp from World Port are quite nice and very convenient.

The same thing goes for the Alfredo sauce, but don’t you dare buy a bottle from the supermarket. That would be blasphemous. If you absolutely don’t want to make your own, call up an Italian restaurant in your area and order a quart or so from them. The Sicilian Cafe on East Tropicana will be happy to do it for you. They’re good people.

Procedure for Blackened Shrimp Fettuccine Alfredoblackened-shrimp-alfredo 

  1. Make the pasta. Cook it al dente.
  2. While the pasta is cooking, prepare the shrimp according to the directions on the World Port box.
  3. Remove shrimp from pan and set aside. Keep them covered.
  4. Gently melt butter in a saucepan over very low heat. The butter must not boil.
  5. Slowly stir cream into the melted butter and bring to a gentle simmer by increasing the heat to medium-low.
  6. Add nutmeg and salt
  7. Drain cooked pasta and add it to the cream mixture. Stir to coat pasta and let it return to a simmer.
  8. Add cheese and stir it in. The sauce will thicken.
  9. Toss in shrimp, and serve with extra cheese.

Alternatively, you could put the fettuccine on a platter and place the shrimp on top for presentation’s sake. I like to toss it in because the blackening seasoning mixes with the cream and it’s delightful. However, the shrimp do lose the blackened look.

A garnish of freshly chopped parsley or chives right on top would be very nice, too. Some chefs like to add a couple of tablespoons of cream cheese. That’s optional and not authentic, but really good.
